Sour Beer can take a variety of forms. Most sour beers are acidic, sharp, tart, fruity, dry and yes, sour, but the ways in which they are made vary greatly. There is the pre-fermentation Kettle Sour or Sour Mash beer, the spontaneously fermented or wild fermented type, and the post-fermentation sour that may get a mixed culture of yeasts added, barrel-aged, or both.
