The Cellar Collection features a range of beers from our cellar. Many of these beers are rare, limited, and/or one-off releases that we have chosen to hold back from the market and release when the time is right. The beers are either over 8% or feature some wild yeast or mixed fermentations that can change and often benefit the beer.
