Brettanomyces Beers
Brettanomyces is a yeast strain that breweries have used for both primary and secondary fermentation. Many different Brett strains exist, and some beers (like Almanac's Saison de Brettaville) use a variety of Brett strains in their beer. Brettanomyces doesn't make a beer sour on it's own, but has been used by brewers alongside other wild and cultured yeast strains to add complexity to sour and barrel-aged beers.
