Tribute is a new beer made in an old style. Barley wines date back to the days of yore when a special 'heavy' ale was needed for the time when a common beer would not do. Tribute is brewed by hand using Elizabethan 'Double Wort Mashing' process that yeilds very high gravity wort. The wort is boiled with New Zealand hops, fermented with a traditional London Ale Yeast and given long conditioning period after fermentation to let the flavors harmonise and mellow. The result is a warming ale with layers of biscut, roasted hazelnut and maple syrup, with hints of blackcurrant and toast. Tribute pairs well with hearty venison or beef dishes. for desert match it with chocolate and rich creamy indulgences.
